Black Eyed Peas (Instant Pot)

Instant Pot Black Eyed Peas


1 lb. dry black eyed peas
2 large carrots
1 cup onions
2 celery stalks
1 can of diced tomatoes
2 cups of veg. broth or chicken broth
1 cup water
1 tbls. of olive oil
1 tsp. garlic powder, salt, pepper,
2 tbls. nutritional yeast
couple of drops liquid smoke

I use a 5 quart Instant Pot. Wash your peas and set the Instant Pot on saute. Saute the celery, onions, carrots and seasonings. Add the of diced tomatoes, broth and water. Lock your IP and set it on the presetting for Soups (25 minute). I allowed a natural release then removed the top after about 25 minutes. Did a taste test, added more salt and pepper. I left the top off so it can cool and it thicken.
